The Original 1967 Makhani is a 58-year-old family archive. We've been hard-pressed to find anything that rivals the sophistication and class only an Old Delhi master maker can deliver. The New York Times, in 1975, first printed the English phrase "Butter Chicken" to describe a specialty at Gaylord in Manhattan. The old boy was a trailblazer on the Delhi culinary circuit, working alongside the Lamba family from Bombay to Delhi, representing Indian gastronomy as one of Old Delhi's last Mughal grandmasters, from the world's most famous Indian kitchens to yours.

Pandeli is run by a father and son duo who create authentic North Indian sauces. Their flavourful offerings include the famous Makhani sauce, also known as butter chicken sauce, which is based on a 58-year-old family recipe. The Panwar family began making it themselves after moving to the UK in the 1970s and missing the authentic tastes of Delhi.
HISTORY
TRUTH ALONE TRIUMPHS
Ram Kishan Panwar was born in 1951 in the hills of Uttarakhand, Dehradun — the eldest son of a family of six, raised simply, but never suited to a small life. At fifteen, he left for Delhi with a train ticket and a prayer. He entered hospitality at the very bottom. It was during this period that he came under the guidance of Mohan Lal, Chef de Cuisine at the Vikram Hotel — a man rooted in the Mughal cookery traditions of Peshawar. He became his guru shishya. Between 1967 and 1974, he cooked in Old Delhi at a time when Indian food was governed by discipline and hierarchy. Kitchens were not expressive places. They were exacting. Recipes were not written down, and they were certainly not passed on freely. Knowledge was guarded, reputations were earned. You had to be more than just good.
